Sweet plantains are an amazing side dish! Simple, sweet, and savory — it doesn’t get much better! This recipe is very easy and oil free. You can still get that delicious flavor without having to deep fry them. Keep reading for the full recipe and some tips!

Let’s start! First, you want to have some very ripe plantains. There are green plantains which are used for tostones and yellow-ish plantains that are more ripe and sweeter. For this recipe, you want the more yellow ones! I usually buy them and wait until they look like this:

To the untrained eye, they look like they have gone bad, but no! If you crack them open there will be gooey deliciousness. I get impatient waiting for them to fully ripen so I usually stick them in a paper bag. This trick works with most things if you’re trying to speed up the ripening process!

The Details

Ready for it? Heat the oven to 350 degrees, slice the ends off the plantains and make one slice lengthwise. Wrap the plantains in aluminum foil and bake for 40 minutes or until golden brown. That’s it! If you want them even more caramelized, you can peel back the skin of the plantains a little, sprinkle some brown sugar then close the skin before wrapping in foil. No matter what, you’ll have some delicious plantains in no time!

Slice and serve with your favorite main dishes! These would go great with our Vegan Arroz Con Pollo!

Easy, Oil Free Sweet Plantains

Ingredients

  • 3 Ripe (black) plantains

Instructions

  1. Heat the oven to 350 degrees.

  2. Slice off the ends of the plantain and make one slice lengthwise to allow steam to escape. Wrap in aluminum foil and bake for 40 minutes or until dark golden brown. Unwrap, peel the skin off, slice, and serve. Enjoy! 

Recipe Notes

If you would like the plantains to be more caramelized, you can peel back the skin and sprinkle brown sugar over them. Wrap back up in the skin and foil and put in the oven as normal.
